To keep your Thanksgiving meal fresher longer, you need to keep it in a safe storage environment. Most leftovers will stay fresh and tasty for at least a few days in the fridge, or potentially longer than a month if placed in the freezer. Additionally, it’s a good rule of thumb to put your Thanksgiving turkey, stuffing, gravy, and other side dishes in the fridge within 2 hours of serving. This will ensure your food’s integrity is preserved and remains tasty when you eat it later.

The following is the shelf life of common Thanksgiving items:

  • Turkey: Your bird can last 3-4 days in the fridge and 2-3 months if placed in the freezer
  • Gravy: Typically, gravy can last about 1-2 days in the refrigerator and last 2-3 months in the freezer
  • Cranberry Sauce: Your sauce can last quite a while in the fridge with a storage time of 10-14 days, but a lower storage time in the freezer of only 1-2 months
  • Stuffing: Only lasts about 3-4 days in the refrigerator and 1 month in a freezer
  • Mashed Potatoes: Your potato dish may only last 3-5 days in the fridge, but it can last up to 10-12 months if placed in a freezer

Whether you’re cooking it for the first time or reheating it, you should cook all leftovers to 165 degrees before you eat them. This is just food safety 101 and it can help prevent serious illnesses from occurring.

When it comes to storing food correctly and safely, it’s not just as simple as getting a bag or Tupperware and calling it a day. There’s plenty of planning to ensure your food is properly protected for the remainder of its food cycle.

  1. Make room in your refrigerator and freezer ahead of time to avoid shuffling things around after dinner
  2. Make sure you have plenty of small and large freezer bags, and freezer-safe containers

  4. Once your leftovers are packed away, avoid opening and closing the refrigerator door until the food has had time to cool down.

Asparagus Supply Remains Tight

The supply of asparagus is still being affected by major logistic issues. Problems surrounding air and ocean shipments are causing supply to remain low. However, the quality of the asparagus that is available is good.

Avocados Are in Fair Supply, Good Quality

Normal avocado supply is expected through February. This will bring more stable ripening and skin appeal. This month we can expect bigger sizes of avocados to still be in short supply, but once our normal avocados are in full season the quality should be nice.

Expect Price Changes for Berries in Your Produce Department

Blackberry prices are still on the rise, but due to recent rain in Mexico, we can expect a price drop for blueberries and raspberries.  While the quality of berries for the most part remains good, suppliers caution to look out for some quality issues with recent weather events.

Green Bean Supplies Remain Tight

Cool weather and rain have slowed Georgia and California’s production and quality causing short-term limited supplies of green beans. With a few growers losing fields due to heavy rain, supply is inconsistent across the board. Luckily, we can expect volume to increase slowly over the upcoming period. 

Broccoli and Cauliflower Supply is Short

Demands for broccoli and cauliflower exceed the supply at this time. This makes the supply short for both products for the time being. Market pricing continues to be high, but the quality of the available product is expected to be good. 

Expect Bad Supply and Fair Quality on Tomatoes

Prices for tomatoes continue to increase across the board this week. Tomato supplies out of Florida will not be fully up and running until late November and multiple storms in Baja California have hurt production. Low supply in these areas applies to both Roma and Round Tomatoes.

Corn Shortages Are As Expected

Supplies for corn are traditionally very tight this time of year as production moves to new growing areas. We see that trend continuing this November. Corn out of the East is transitioning from the North East to Georgia and Corn out of the West is basically non-existent. Producers are expecting quality and prices to improve as production moves to Coachella and Mexico.

Leaf and Iceberg Lettuce are in Short Supply and Poor Quality

Supply is extremely tight for many lettuce varieties. The INSV virus has created multiple quality issues and caused lower yields for Iceberg and Romaine lettuce. Weights for lettuce will be on the lighter side until the supply improves. The only lettuce that does not seem to be largely impacted by shortages is tender leaf lettuce.

Arizona Microgreens

Arizona Microgreens, similar to our own business, is run by two brothers, Joseph Martinez and David Redwood. Their company produces microgreens for restaurants, schools, and individuals throughout Arizona. Since their founding in 2013, the brothers have been producing Microgreens without herbicides or pesticides, using just natural light and organic soil, and while leaving behind very little waste. They produce more than two dozen types of microgreens in their food-safe certified greenhouse located in Phoenix, Arizona including:

What Are Microgreens?

In short, Microgreens are vegetables and herbs that are grown for just a few short weeks. Arizona Microgreens come in a variety of forms as they can be grown from different seeds, including melon, cabbage, basil, and sunflower. The main difference between a microgreen and other produce is the harvesting time. While many forms of produce are harvested when the plant is fully mature, microgreens are harvested when the first set of leaves appear on the sprouted plant. At this stage, the microgreens are packed with nutrients because they are much smaller, but contain all the essential vitamins the plant would need to reach maturity. 

Microgreens can often be confused with sprouts, but they are not the same. Microgreens are grown in soil and sunlight for two to three weeks before they are harvested by cutting the stem and leaf from the root. On the other hand, sprouts are vegetable seeds that are just beginning their growth process and are typically only a few days old. 

Health Benefits of Microgreens

There is a lot of research indicating significant health benefits to eating microgreens. In 2012, researchers found that in comparison to mature leaves, microgreen leaves contain higher nutritional densities. Broccoli, kale, and cabbage microgreens in particular have been known to contain large amounts of sulforaphane. Adding this chemical compound to your diet through microgreens could have major health benefits, as sulforaphane has been shown, in several controlled studies, to have anti-cancer and anti-inflammatory effects. Just one ounce of the Arizona Microgreens Wellness Mix (consisting of broccoli, cabbage, and kale microgreens) contains the same amount of sulforaphane found in 1.5 pounds of raw broccoli. 

How To Eat Arizona Microgreens

Adding them to the menu might sound intimidating to someone new to microgreens, but they require very little preparation. They have a similar flavor to their fully mature counterparts, but are typically even stronger. Products coming out of Peru remain very limited. Additionally, container availability is extremely low due to them being sent to Asia for loading goods and not being able to be shipped to other countries. However, the products that are coming in are supposed to be of good quality.

Avocados Are in Fair Supply, Good Quality

Demand is still exceeding the supply of avocados and prices continue to rise. Volumes out of Mexico are very light with fruits being rather small than what your produce department likely demands.

Expect Fair Quality Berries in Your Produce Department

Blackberry, blueberry, and raspberry prices are on the rise. While production is primarily coming out of California right now, it will begin coming out of Mexico within the month. Expect tighter supplies until the transition is complete.

Green Bean Supplies and Quality is Tight

Weather is causing havoc on the green bean supply. Additionally, logistics is a nightmare with imports coming into the U.S that can’t match the demand for the product. It’s expected to continue like this for the next several weeks until supply and logistics catch up with demand.

Expect Fair Supply and Quality in Brussels Sprouts in Your Produce Department

We’re still not in the clear but after months of uncertainty, supplies seem to be improving for the vegetable. Demand continues to be steady, but growers are seeing 

some quality issues with their crops.

Potato markets are beginning to stabilize but you should be cautious when ordering for your produce department. The crop yield and their sizing remain to be a concern, which means there are some supply concerns and quality issues you need to be aware of. 

Tomato Prices are Rising, Supply and Quality Remain Low

Supply is extremely tight out of the East due to recent weather events. Growers are also reporting possible supply gaps as production transitions South for the Fall. Production out of Mexico and California remains steady though. So, if possible, order tomatoes from these regions.

If we restricted ourselves to strictly local items, then our produce departments would likely be reduced to a mere shelf.
